Roasted Beets with Yogurt & Pistachios

Beets are a potent source of antioxidants and phytonutrients that have been shown to support optimal blood pressure and cardiovascular health. The fiber content and propensity to promote beneficial bacteria in the microbiome also makes beets a gut-healthy food!
Pair cooked beets with your favorite yogurt for added probiotic benefits, and top with extra virgin olive oil and pistachios for an extra dose of polyphenols and healthy fats. This makes for a delicious side dish!
Ingredients
3 whole beets
¼ cup Greek yogurt
¼ cup chopped pistachios
Extra virgin olive oil
Salt
Pepper
Fresh parsley, chopped
Preparations:
- Roast the beets by placing them on a baking sheet in the oven for 45-60 minutes at 400 (if they are large, they may need more time, or you can cut them in half).
- Once they are tender, allow to cool slightly, then peel off the skin.
- Spread the greek yogurt onto a serving dish, cut up the beets and place on top.
- Top with pistachios, a drizzle of extra virgin olive oil and a pinch of salt and pepper. Finish with fresh parsley.
