Salad in a Jar

This is a simple salad, very fresh and very tasty, it’s perfect to take to work or to have it ready in the refrigerator for a couple of days ahead to eat any time.

Salads in a jar are very versatile and easy to take with, they can be made with countless combinations, so there is no excuse to not eat something tasty.

Ingredients:

1 glass jar with a lid
1 cup vegetable pasta
¾ cup of cut fresh strawberries
¾ cup of cut cucumber
Assorted lettuce as needed to fill the jar

For the vinaigrette:

1 tablespoon mustard
Salt and Pepper
Virgin olive oil to taste
A squeeze of lemon juice

Preparation:

Place the dressing in the jar, boil the pasta following instructions on the package, rinse with cold water and place on the bottom of the jar, then add the strawberries, then cucumber and the lettuce on the top, close it with the lid and store in the refrigerator, it will stay fresh for two days.

When you are ready to eat it, just shake it well so all the ingredients get the dressing, pass it to a plate and it’s all ready to eat, enjoy!
