Probiotic Chia Pudding

Chia pudding is a great way to easily add more fiber and omega-3 fatty acids into your diet to support gut health. These nutrients can increase the number of good bacteria, reduce the number of bad bacteria, and improve the gut lining!
Blueberries are also a beneficial source of prebiotics which feed gut microbes, and they are rich in antioxidants and polyphenols.
This version also provides probiotic benefits by using kefir, a fermented form of milk.
Using frozen berries allows the juices to thaw into the chia pudding, which naturally sweetens the kefir, however you can use fresh berries or any of your favorite fruits instead!

Ingredients
For 4 Servings
1 cup Carnaroli rice
1 medium onion, chopped
2-3 tablespoons of EV Olive Oil
½ glass of white table wine
1 pint chicken stock preprepared (or vegetable stock)
1 cup rinsed blueberries
1 cup roasted chestnuts or more, chopped in big pieces
2 tablespoons butter
2 tablespoons gorgonzola cheese (optional)
