Spring Snap Pea Salad

This refreshing recipe combines the crispness of snap peas with the brightness of fresh herbs and a zesty lemon dressing. Ingredients

For the dressing:

3 tbsp lemon juice
3 tbsp extra virgin olive oil
1 tsp dijon mustard
1 tsp maple syrup
Salt to taste

For the salad:

About 1 lb of fresh snap peas
1/4 cup mint leaves, finely chopped
1/4 cup roasted pistachios, roughly chopped

Preparations:

  1. Start by adding the dressing ingredients to a large bowl and mixing well to combine.
  2. Trim the snap peas and slice them into diagonal pieces.
  3. Add the snap peas, mint and pistachios to the bowl with the dressing and toss to combine.
  4. Taste and add more salt if needed.
  5. Top with an extra drizzle of olive oil and  sprinkle of mint.
