Probiotic Chia Pudding

Chia pudding is a great way to easily add more fiber and omega-3 fatty acids into your diet to support gut health. These nutrients can increase the number of good bacteria, reduce the number of bad bacteria, and improve the gut lining!
Blueberries are also a beneficial source of prebiotics which feed gut microbes, and they are rich in antioxidants and polyphenols.
This version also provides probiotic benefits by using kefir, a fermented form of milk.
Using frozen berries allows the juices to thaw into the chia pudding, which naturally sweetens the kefir, however you can use fresh berries or any of your favorite fruits instead!
Ingredients
Makes 1 serving
1 cup kefir
3 tablespoons chia seeds
¼ cup frozen blueberries
Optional: 1 tablespoon maple syrup
Toppings: chopped nuts and berries
Preparations:
- Add the kefir, chia seeds and blueberries to a jar and mix well with a spoon to combine.
- Place in the fridge to thicken for at least 3 hours or overnight.
- Transfer the pudding to a bowl and top with chopped nuts and more berries (or your favorite fruit)
