Fennel and Orange Salad

This simple salad features fresh, seasonal oranges and thinly sliced fennel that is sure to impress at your next dinner party.

Oranges are rich in vitamin C, an antioxidant that helps to protect against free radicals. Vitamin C may also promote gut health by enhancing the integrity of the gut lining, preventing disease and adding more bacterial diversity to the microbiome.

Fennel has also been shown to support gut health by lowering inflammation in the bowels and even minimizing bacteria that may lead to excess gas. It is a prebiotic food, meaning it feeds the beneficial bacteria in the gut and supports a balanced microbiome.

Ingredients

For the salad:
1-2 fennel bulbs, thinly sliced
⅛ red onion, thinly sliced
1 cara cara orange, peeled and sliced into rounds
½ avocado, diced
2 tablespoons toasted pumpkin seeds

For the dressing:
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
Salt
Pepper

Preparations:

  1. Add the dressing ingredients to a jar and shake well to combine.
  2. Add the fennel and red onion to a large bowl and toss with the dressing. Transfer to a serving dish and top with the oranges, avocado and pumpkin seeds.
  3. Finish with an extra drizzle of extra virgin olive oil, a pinch of salt and a few of the fennel fronds.
