Banana Oatmeal Bars

These banana oatmeal bars are absolutely delicious and perfect for breakfast meal prep or as a healthier dessert.

Oats are a prebiotic food that can support gut health. They contain fiber, beta-glucan, and resistant starch, which is the optimal food for your gut microbes contributing to a healthy gut microbiome.

These bars are also low in added sugars and contain healthy fats, protein and carbohydrates to keep you feeling fueled. Serve topped with extra Greek yogurt for even more protein!

Ingredients

2 large ripe bananas
1 egg
5 oz Greek yogurt
2 tbsp maple syrup
1 tsp vanilla extract
2.5 cups whole rolled oats
½ tsp baking soda
½ tsp baking powder
Optional: chocolate chips

Preparations:

  1. Preheat oven to 350 degrees and line an 8×8 glass baking dish with parchment paper.
  2. Mash the banana in a large mixing bowl then mix in the egg, Greek yogurt, maple syrup and vanilla extract.
  3. Mix in the oats, baking soda and baking powder until combined.
  4. Mix in the chocolate chips if using.
  5. Pour the mixture into the prepared baking dish and bake for about 40 minutes or until fully set.
  6. Remove from the oven and allow to cool before slicing.
  7. Store in the fridge in an airtight container for up to 5 days.
