Plant Protein Salad

8 ounces of crisp butter lettuce
1/2 avocado, peeled and pitted, cut in squares
1-1/2 cup cooked mixed beans
1 organic Persian cucumber, sliced
½ cup tomatoes, sliced
¼ cup pickles, sliced
½ cup Kalamata olives, sliced in half
2 Tablespoons toasted sunflower seeds
2 Tablespoons toasted pumpkin seeds
½ cup saurkraut, unpasteurized

2 tablespoons extra virgin olive oil
2 tablespoon soy sauce
1 Tablespoon chives, chopped


1. Mix all ingredients together.
2. Pour the dressing on top. Toss together and serve.
