Introduction
Stews, if done right, can feel like a warm hug in a bowl. And that is exactly what we aimed for with this nourishing, Moroccan-inspired dish. This stew is chock full of fiber from cauliflower (fresh or frozen is fine), lentils and chickpeas (canned is ok, but we also included instructions to make them from dry). It is also loaded with gut microbiome loving polyphenols in the onion, garlic, cinnamon, cumin, coriander, cloves, spinach, dried apricots, and tomatoes. Plus, it is super simple to prepare, at only 10 minutes (think of it as a hug from us to you when the last thing you want to think about is making a healthy meal that is too prep-intensive).
