Creamy Berry Ice Cream

In addition to being delicious, berries, in particular the red and dark blue/black varieties have a number of well documented health benefits. They are a great source of polyphenols, such as anthocyanins, ellagic acid, and resveratrol, soluble fiber and vitamins. For example, one cup of strawberries (150 grams) provides a whopping 150% of the RDI for vitamin C.

One study showed that blueberries, blackberries, and raspberries when measured in a test tube have the highest antioxidant activity of commonly consumed fruits, next to pomegranates. Several studies have confirmed that the antioxidants in berries may help reduce oxidative stress.

Berries are a good source of fiber, including soluble fiber. Studies show that consuming soluble fiber amongst other benefits for gut health, slows down the movement of food through your digestive tract, reducing the rise in blood sugar and insulin in response to the natural sugar contained in the berries.

Ingredients:
7 oz. frozen berries
2 sliced frozen bananas
1 cup coconut yogurt
Preparation:

1. Place all the ingredients in a blender and mix until it gets a creamy texture.

2. Serve immediately and decorate with mint leaves or almond butter.
