Ancient Grain Pasta
Prep: 10 minutes | Cook: 25 minutes | Total: 35 minutes | Servings: 4 |
INGREDIENTS
8 cloves of garlic, minced
1 medium leek, sliced lengthwise and sliced thinly
1-2 cups cherry tomatoes, sliced
8 oz. of wheat spaghetti
1-2 cups of broccoli florets
2 cups snow peas
½ glass of water or white wine
Salt and pepper to taste
1 tablespoon thyme
1 tablespoon basil
3 tablespoons of extra virgin olive oil
1 tablespoon of chili pepper (optional)
DIRECTIONS
1. Cook pasta according to the instructions, drain and set aside.
2. Heat olive oil over medium heat in a large skillet.
3. Add garlic and cook for 2 minutes
4. Add sliced leeks and cook until tender, about 4 minutes.
5. Add tomatoes into the mixture.
6. Add wine and cook for about 2 minutes
7. Add the broccoli florets and peas to the mixture
8. Sprinkle thyme, basil, salt and pepper and stir.
9. Cook for about 4-5 minutes or until broccoli is tender.
10. Add your favorite sauce if desired (pesto, spaghetti)
11. Mix in the spaghetti into the mixture, and serve.
